Paleo Sloppy Joes (Clean Eating, Gluten-Free)

Ingredients

  • 2 lb lean ground beef
  • 2 tbsp olive oil
  • 1 onion diced
  • 1 red bell pepper diced
  • 3 to matoes diced
  • 12 oz tomato paste 2 X 6oz cans
  • 3 tsp Bragg Gluten-Free soy sauce *
  • 1/3 cup water
  • 2 tbsp vinegar
  • 2 tbsp maple syrup
  • 2 garlic cloves crushed
  • 1 tbsp steak seasoning or bbq spices
  • Optional: 1 cup shredded mozzarella **

Instructions

  1. Heat 2 tbsp olive oil in a large skillet over medium heat and cook the diced onion and red bell pepper for about 2 minutes, constantly stirring.
  2. Add the ground beef and steak spices. Cook for about 5 minutes, constantly stirring, breaking the ground beef into small pieces.
  3. Add the rest of the ingredients and continue cooking, stirring often, for 7 to 10 minutes, or until the beef is thoroughly cooked. There shouldn't be any extra sauce in the bottom of the pan and the pieces of meat should still be clinging together.
  4. Optional: Turn off the heat and top with shredded mozzarella cheese.
  5. Toast your favorite hamburger buns on the inside, in the oven on Broil setting (Caution: the bread will toast very quickly this way)
  6. Fill the hamburger buns with the sloppy joe mixture and any other desired additional toppings.

Recipe Notes

*For the paleo version: Replace with sea salt.

**Use dairy-free mozzarella for the vegan/dairy-free/paleo options. Just make sure the brand of cheese you are using is compliant with your personal diet, or make your own.You could also skip the cheese altogether, as it is entirely optional.

For a 100% gluten-free recipe, use your favorite gluten-free hamburger buns.

The type of steak seasoning used should be compliant with your personal diet (Not all spice mixes are gluten-free and/or paleo).
