This recipe is super simple, but don’t be fooled by its simplicity! It is a very delicious way to kickstart your day by bombarding your body with powerful nutrients both contained in the eggs and avocado.
As said in a previous article, avocados are full of benefits and are actually called a superfood. They are an anti-cancer, heart-disease preventing, nutrient-packed powerhouse, plain and simple. Don’t be scared by the high amount of fat they contain, as it is the GOOD type of fat.
As for eggs, they are considered to be among the best foods in the world. They are, among many other benefits, full of HDL, the good cholesterol, which helps keep your heart healthy.
They are also full of lean protein which helps you lose weight by eating less calories to feel full.
This recipe is a quick way to jumpstart your metabolism in the morning. So what did you have for breakfast?
Here’s what I had:

Baked Eggs Inside Avocado Halves
Ingredients
- 2 Avocados
- 4 Eggs
Instructions
Preheat oven to 350 Fahrenheit.
- Split the avocados in half and remove the pits.
Scoop out some of the avocado to make sure an egg will fit inside.
Place the avocado halves on a baking sheet. Place an aluminum sheet (that you will roll-up to make a long thick stem) under the thin part to keep them from spilling.
- Here’s how I did it:
- Bake for about 15 minutes, or until the eggs get a light brown color.
- Let sit for 3-5 minutes before eating. (You could probably add some grated mozzarella cheese or parmesan to this recipe if you like, I just prefer them this way!)
