Five Minutes Kale Chips Frittata

Kale is Awesome. Not only for its crunchy texture and punchy taste, but also for its amazingly high content in essential nutrients. Having kale in the morning instantly boosts your metabolism and I simply love the feeling.

This is one of my favorite kale recipes. It is quick, easy and terribly effective. I love kale chips and incorporating them into a frittata was pure genius!

The mix of parmesan cheese and kale chips gives this recipe a delicious kick that will convince you on the first bite. Some people like their breakfast to be a little more “bland” and may find this recipe a little rough in the morning.

As said in a previous article, kale is a nutrient-filled powerhouse. It’s high contents in vitamin K (over 1000% per portion), Iron, various vitamins and its anti-cancer and heart disease protection properties makes it one of the most powerful foods on the planet.

Five Minutes Kale Chips Frittata

  • 2 eggs
  • 2 tablespoons parmesan cheese
  • ¾ cup kale (chopped)
  • 1/3 cup shredded mozzarella cheese
  • 1 tablespoon coconut oil
  1. Preheat oven to 400 Degrees Fahrenheit. Beat the eggs and parmesan cheese in a large bowl. Melt the coconut oil in a small pan (about 6 inches) over low heat.

  2. Pour the mix into the pan and cook until the eggs are hard enough so you are able to place the kale and mozzarella cheese on top.

  3. Place the Kale over the Eggs:
  4. Then sprinkle the shredded mozzarella cheese on top:
  5. Place in the oven and bake for 10-12 minutes
  6. Enjoy!
