This low-carb egg roll in a bowl meal prep recipe is super tasty, thanks to my secret creamy sesame sauce. It is healthy, low-carb, keto and it can be made with either ground beef, ground turkey or ground pork. It could also be made vegan by replacing the ground meat with cubed firm tofu. This very easy and quick recipe will give you 4 lunches for about 25 minutes of preparation. Make a Whole30 & Paleo version by using the right type of mayonnaise.<\/p>\n

Meal prep time! Sunday afternoons are very busy at our house. By 3 PM the kitchen is usually a big mess with tons of pans and bowls piled up on the counters and there\u00a0are food splatters everywhere!<\/p>\n

The good part though is that we won’t have to cook for the rest of the week. Everybody’s lunch is packed and sealed in meal prep containers, ready for the next 5 days and we also have food ready for every evening, too.   1. Ground Meat.\u00a0<\/strong>It can be any type of meat really! Either ground beef, pork, chicken or turkey will do. For a low-fat version, pick extra-lean ground meat.<\/li>\n
  2. Coleslaw Mix.<\/strong> You could shred your own cabbage and carrots for a cheaper version. You would need 1 pound of it.<\/li>\n
  3. Onion.\u00a0<\/strong>Some chopped onion for taste, any type will do. I used yellow\u00a0onions.<\/li>\n
  4. Garlic Powder.\u00a0<\/strong>You could use fresh garlic instead. I just love using garlic powder because it is quick and easy.<\/li>\n
  5. Ginger Powder.\u00a0<\/strong>Again, fresh ginger could be used here.<\/li>\n
  6. Tamari.\u00a0<\/strong>Tamari is used for the gluten-free version. If you don’t mind the gluten in soy sauce, you could use that instead.<\/li>\n
  7. Rice Wine Vinegar.<\/strong>\u00a0To add some bitterness and a little bit of sweetness. Could be replaced with white wine vinegar or even apple cider vinegar.<\/li>\n
  8. Sesame oil.\u00a0<\/strong>Used to cook the meat. You could use any other type of cooking oil if you don’t like the taste of sesame oil.<\/li>\n
  9. Fish sauce.\u00a0<\/strong>Used solely as an ingredient in the sesame sauce and it is entirely optional.<\/li>\n
  10. Mayonnaise.\u00a0<\/strong>Again, used for the sesame sauce, which is optional.<\/li>\n
  11. Sriracha.\u00a0<\/strong>Used as an optional topping.<\/li>\n

    How to Make your Egg Roll in a Bowl<\/h2>\n

    1. Cook the onion.\u00a0<\/strong>Start by cooking the onion in sesame oil until it is translucent.<\/li>\n
    2. Cook the meat. <\/strong>Make sure it is cooked through and broken into bits. You will add spices at this step.<\/li>\n
    3. Add Coleslaw Mix. <\/strong>Also, add the rest of the ingredients here, except for the sauce ingredients, of course.<\/li>\n
    4. Cook until tender. <\/strong>Remove from heat when desired consistency is attained, some people will like it crunchier or more cooked. Just cook and stir until you are satisfied with the texture.<\/li>\n
    5. Make the sauce.\u00a0<\/strong>Whisk the sauce ingredients in a small bowl.<\/li>\n
