Peanut Butter Protein Cookies

These healthy protein cookies are made with the healthiest ingredients. They are gluten-free, keto and flourless. Plus, you can never go wrong with peanut butter, right?

Ingredients

  • 3/4 cup almond flour
  • 1/2 cup whey vanilla protein powder ISO for low-carb / keto
  • 1 cup peanut butter natural, smooth
  • 2 large eggs

Instructions

  1. Preheat oven to 350F.
  2. Line a baking sheet with parchment paper. (or grease it)

  3. Combine all of the ingredients in a large mixing bowl and stir gently until smooth.

  4. Scoop about 1/4 cup (or 2 heaped tablespoons) of cookie dough and roll it into a ball using your hands.  Place the balls on your baking sheet with enough space between each of them.

  5. Flatten the cookie dough balls into your baking sheet using a fork. (These cookies will not get larger while cooking, they will remain the same size).

  6. Transfer to the oven and Bake for 12 to 15 minutes.

  7. Remove from the oven, wait 10 minutes, then place the cookies on a wire rack to cool down.
