This protein-packed, extra smooth and super tasty fudge recipe is made with only 4 ingredients. Ready under 5 minutes and no-bake, these tiny little protein bars are chewy, fudgy and tastier that anything you will find at the store. Perfect either as a post-workout lunch, quick snack or dessert, they are also entirely refined sugar-free, egg-free, flourless, paleo, dairy-free and gluten-free!

Ingredients

  • 1 1/2 cups cashews soaked in water for at least 15 minutes
  • 1/4 cup coconut oil
  • 1/4 cup maple syrup
  • 1/2 cup Plant-Based vanilla protein powder Optional - See recipe notes
  • Optional: 1/2 tsp kosher salt

Instructions

  1. Process the cashews in a food processor until they turn into a fine flour.
  2. Add in the rest of the ingredients and blend until smooth.
  3. Line a bread loaf pan with parchment paper* and press the mixture in firmly with your hands.
  4. Refrigerate overnight or for at least 2 hours.
  5. Cut into squares and serve.

Recipe Notes

* Tip: Soak parchment paper in water, it is much easier to work with this way.

**Whey protein version: Use 2 cups raw cashews instead of 1 1/2. 

Protein powder is optional. If removed, use 2 cups raw cashews and 1 tsp vanilla extract.
