Ingredients

  • 8 Eggs
  • 1 1/4 cup chopped spinach leaves
  • 1 cup avocado cubed
  • 1 cup Roma tomato seeded and diced
  • 1/3 cup green onion chopped
  • 2 tbsp fresh basil chopped
  • 1 1/4 Cup shredded mozzarella * divided (see instructions)

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Grease a muffin tray with oil spray.

  3. Beat 8 eggs in a large mixing bowl.

  4. Making the Mixture. Stir in 1 1/4 cup chopped spinach, 1 cup cubed avocado, 1 cup seeded + cubed Roma tomato, 1/3 cup chopped green onion, 2 tbsp chopped fresh basil, and 3/4 cup shredded mozzarella.

  5. Pour the mixture evenly into 12 muffins tins.

  6. Top with 1/2 cup mozzarella.

  7. Bake until the cheese starts to brown and a toothpick comes out clean.

  8. Store in the refrigerator for up to 5 days in a sealed container.
