Baked Eggs Inside Avocado Halves

Ingredients

  • 2 Avocados
  • 4 Eggs

Instructions

  1. Preheat oven to 350 Fahrenheit.

  2. Split the avocados in half and remove the pits.
  3. Scoop out some of the avocado to make sure an egg will fit inside.

  4. Place the avocado halves on a baking sheet. Place an aluminum sheet (that you will roll-up to make a long thick stem) under the thin part to keep them from spilling.

  5. Here’s how I did it:



  6. Bake for about 15 minutes, or until the eggs get a light brown color.
  7. Let sit for 3-5 minutes before eating. (You could probably add some grated mozzarella cheese or parmesan to this recipe if you like, I just prefer them this way!)
