  • 1 1/2 cup chopped green onion
  • 3 garlic cloves minced
  • 1 tbsp lemon juice
  • 4 cups chicken broth
  • 2 cups diced potatoes
  • 2 cup fresh spinach chopped
  • 2 cup fresh kale chopped
  • 2 tbsp butter
  • Parmesan cheese to taste (Optional)


  1. Gently melt butter in a large saucepan over low heat, then add in the green onion, cook for about 15 minutes stirring occasionally, add garlic 3 minutes before the end.
  2. Meanwhile, cut the rest of your ingredients.
  3. Add the potatoes and chicken broth to the saucepan and bring to a boil. Then reduce heat and simmer for 20 minutes, or until the potatoes are soft.
  4. Remove from heat and add the rest of the ingredients.
  5. Set aside for about 10-15 minutes
  6. Using a blender or food processor, pulse the soup a few times so it keeps some texture. You could blend it until smooth, but it does not taste the same!
  7. Serve and sprinkle some parmesan cheese on top.
