Ingredients

  • Wild Berry and Honey Coulis
  • 4 cups Frozen Berries
  • 4 Tablespoons Honey
  • Avocado and Oatmeal Gluten-Free Superfood Waffles
  • 2 eggs
  • 1 cup almond milk
  • 1 3/4 cup Pure Oatmeal
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup mashed avocado
  • 1 1/2 teaspoon vanilla extract
  • 2 teaspoons honey

Instructions

  1. Coulis: Simmer uncovered for about 12-15 minutes over medium heat in a small saucepan.
  2. Waffles: Blend all of the ingredients together until smooth. Let the batter sit for 10-15 minutes. Pour just enough batter to cover your waffle iron, don’t put too much to avoid spillage. Cook the waffles until they turn golden brown.
  3. Optional: You may add maple syrup along with the coulis for a sweeter version.
