Sweet Potato And Caramelized Onion Hash With Baked Eggs On Top

  • 8 eggs
  • 3 cups grated sweet potato
  • 1 cup grated turnip
  • 1/2 cup plain greek yogurt
  • 2 garlic cloves chopped
  • 1 tbsp smoked paprika
  • ½ cup grated parmesan cheese
  • Optional: 1/4 cup Chopped kale to decorate
  • Caramelized Onion
  • 1 large onion sliced
  • 2 tbsp balsamic vinegar
  • kosher salt
  • 2 tbsp butter


  1. Preheat oven to 425F
  2. Melt 2 tbsp butter in a large skillet over medium heat and add the onion. Add a pinch of Kosher salt and cook for about 25 minutes, stirring occasionally, until dark brown
  3. Meanwhile, grate the sweet potato and turnip
  4. When the onion is ready, deglaze with balsamic vinegar and stir for 1-2 minutes or until most of the liquid has evaporated
  5. Combine sweet potato, turnip, 2 eggs, yogurt, caramelized onion, garlic, smoked paprika, and parmesan in a large bowl
  6. Spread mixture evenly on a baking sheet lined with parchment paper, about 1 inch thick
  7. Create six pools using the back of a spoon
  8. Place in the oven for about 30-35 minutes
  9. Remove from the oven and crack an egg in each of the pools
  10. Optional: Decorate with chopped kale
  11. Place back in the oven for an additional 15-25 minutes, depending on how you prefer your eggs
  12. Monitor closely
  13. Done!
